At long last our Saperavi is back with a new vintage release and a new label. The variety now falls under our flagship Ballerina Canopy range, reflective of its stature as one of our most popular and revered wines.
“Our newly bottled Ballerina Canopy Saperavi issues from the splendid 2021 vintage. The vintage was incredibly mild and as such allowed the grapes to develop excellent flavour ripeness without excessively high sugars. We gave nature a helping hand by bunch thinning and leaf plucking the vines to allow the mild sun to filter through to fewer bunches of grapes, which allowed the vines to ripen the grapes more efficiently. The resultant wine is like essence. It is thick and concentrated on the palate, tasting like a fruit reduction of blackcurrants. The palate is counterpointed by toasty oak and fine velvety tannin structure. The wine is young and will age remarkably well for at least fifteen years. It is a wonderful accompaniment to many foods but would be a heavenly match with a roast rib of beef.” Toni Pla Bou, Senior Winemaker
