Here's what Senior Winemaker Toni has to say about it: "The High Country Shiraz is the epitome of cooler climate Shiraz. It heralds from the middle of the King Valley: rolling hills filled with sunny days of moderate warmth. It displays the requisite blackberry, plums and spice typical of Australian Shiraz but also has an extra dimension of black pepper and violets that adds an extra layer of complexity. It’s great with spice rubbed lamb, roasted capsicums filled with saffron rice or cheese, salume and sour dough bread."
