"The 2021 was the first of a triad of cool la Niña vintages with slower ripening, brighter fruit, more obvious tannin and colour, greater flavour development. The wine was fermented in a traditional static fermenter, pumped over 3 times daily to extract colour and tannin. It was temperature controlled to between 24-26°C, a medium temperature to preserve fruit flavour but enough heat to extract the structural grape tannins that gives the wine colour, aging potential and a fine structured mouthfeel. It was then pressed off skins after 1 week, and racked off into barrel to complete malolactic fermentation which helps wine oak integration and creates wine and oak that are in perfect balance and harmony. The wine spent 18 months in a blend of new and old French oak which added roasted coffee aromas, spice characters and oak structure tannins.
The resulting Ballerina Canopy 2021 Cabernet Sauvignon is true to its noble heritage and is varietally expressive, showing blackcurrant, blackberry, bay leaf, and a hint of liquorice. The oak delivers cinnamon, nutmeg, cedar, vanilla and toast with a palate that has a fine structure, a depth of complex flavours and persistence. A youthful wine with a bright crimson colour and fresh fruit characters along with integrated fine grained tannins that will allow it to age gracefully for up to 15 years. Enjoy with beef dishes or venison as an inspired alternative. It is also delicious with rich tomato dishes, like ragouts and rich dahl recipes."
