Brie Souffle with creamed leeks and rocket salad

A light and delicate Brie soufflé, served atop a bed of creamed leeks adding subtle sweetness and velvety texture. Accompanied by a peppery rocket salad providing a fresh, crisp counterbalance. Perfectly paired with a glass of High Country Pinot Gris, the bright acidity and stone fruit notes enhance the richness of the dish while balancing its creamy depth.

Braised Beef Short Ribs, potato pavé, root vegetables and green peppercorn jus

Served with our Valley Selection 2022 Cabernet Sauvignon

Slow-braised, tender beef short ribs, rest alongside layers of crisp buttery potato pavé and seasonal root vegetables. Finished with a fragrant green peppercorn jus adding subtle heat and depth. The hearty flavours are complimented by the dark fruit and structured tannins of the Valley Selection Cabernet Sauvignon.

Baked Chocolate Tart with berries and berry cream

Served with our Valley Selection 2022 Shiraz

A velvety and bittersweet baked chocolate tart, rich chocolate filling encased in a delicate pastry shell, served with a medley of fresh berries and berry mascarpone. Paired with the Valley Selection Shiraz, full of dark fruit and spice, pairs beautifully with the rich chocolate flavour, making each bite feel even more indulgent.
