Jewels of blood orange and pomegranate bring a vibrant burst of brightness and perfume, while a savoury parmesan and herb crumble brings a satisfying crunch and umami depth. Perfectly matched with the Valley Selection Pinot Grigio Rosé, whose crisp acidity and delicate notes of citrus and peach blossom complement the trout’s purity and dish’s lively interplay of flavours and textures.
