Tasting Notes

Ballerina Canopy NV Sparkling Saperavi
A truly unique sparkling red and the first of its kind in Australia. This wine displays a deep crimson colour. The nose shows layers of black mulberry, blackberry and blackcurrant, with a floral lift and hint of spicy oak. The wine is rich, vibrant and fruit sweet with a popping effervescence and a creamy mousse.

Valley Selection NV Pinot Grigio Rosé
This rosé displays a vivid pink colour. The nose shows aromas of ripe strawberry and raspberry accompany a fine sparkling bead, finishing with bright strawberry, forest fruits and plenty of zest.

Secret Harvest NV Col Fondo Prosecco
This col fondo prosecco displays a glistening green hue. The natural effervescence lifts aromas of crispy fresh apples, meadow hay, guava, pears and creamy soft yeasty undertones. The flavours are much more intense than you’d expect with layers of honey, poached pears, walnuts, citrus and granny smith apples.

High Country 2023 Prosecco
This wine pours with an exuberant mousse and has a very fine stream of tiny bubbles flowing through it. Emanating from the glass are fragrant lilly and elderflower notes followed by fresh cut bread, pear, apple and lemon sherbet aromatics. The palate unfolds with delicious red and green apple, pear and melon fruits tinged with subtle nuances of citrus and bread characters adding layers of complexity. A balanced and crisp finish with depth of flavour and amazing length.

Alpine Road NV Prosecco
This wine displays a pale straw colour with vibrant green glints. The nose shows fresh aromas of apple, quince and pear, leading to riper flavours of stewed apple, quince paste, cantaloupe and loquat and a fresh crisp palate. Made using the Charmat method to allow better retention of the mousse, a finer bead and the intensity of fruit characters to shine on the nose and palate.
