The High Country 2024 Prosecco is a vibrant new release - and a recent Gold Medal winner at the 2025 North East Victorian Wine Challenge - crafted with precision and respect for place.
The 2024 vintage was one of contrasts: a wet spring followed by warm, sunlit days and a condensed harvest that wrapped by Easter. While yields were down, the fruit delivered pristine aromatics, clarity of flavour, and natural acidity - the hallmarks of an exceptional sparkling year.
Picked in the cool of early March, the grapes were gently pressed to preserve brightness, with a touch of solids retained for texture and richness. The base wine rested on yeast lees with careful stirring to build complexity before undergoing a slow Charmat fermentation at 12°C, capturing delicate fragrance and retaining natural CO₂ for a fine, persistent bead.
In the glass, this Prosecco pours with an exuberant mousse and a stream of tiny bubbles. Aromas of elderflower and finger lime lead into layers of fresh pear, crisp apple, and preserved lemon, with subtle hints of almond and bready complexity. The palate is bright, balanced, and remarkably long - a sparkling wine that speaks of elegance and Alpine freshness.
